Spring Recipes From Red Mountain Resort

Guests at Red Mountain Resort can try these new healthy dishes at the resort’s Canyon Breeze Restaurant, which offers spectacular views, outdoor patio seating and an open demonstration kitchen. The property also offers a Chef for a Day program, where visitors can learn how to prepare these nutritious meals alongside the resort’s award-winning culinary team. The two-hour session is $100 and also includes an overview of basic knife skills and other helpful cooking tips.

Here is a sampling of Chef Luethje’s must-try new recipes for 2015:

Strawberry Heirloom Spinach Salad with Homemade Honey Goat Cheese Dressing

  • 4 cups packed spinach, heirloom
  • ½ cup walnuts, toasted
  • ½ cups honey goat cheese dressing
  • 1 1/3 cups strawberries, sliced

Ingredients: Honey Goat Cheese Dressing

  • 2 cups goat cheese                        
  • 3 ½ tbsp. honey                         
  • 1 cup olive oil                           
  • 4 tbsp. white balsamic vinegar
  • 2 tsp. lemon juice
  • ½ tsp. lemon peel, freshly grated
  • 4 tbsp. water
  • ½ tsp. salt

Directions: 

  • For dressing, blend all ingredients together in a blender and serve chilled
  • For salad, remove stems from spinach and break up toasted walnuts
  • Toss salad with sliced strawberries
  • Pour in 2 tbsp. dressing

Raspberry Banana Chia Seed Protein Blast Smoothie

Raspberry-protein-smoothieIngredients:

  • 2 cups plain yogurt
  • 2 cups frozen raspberries
  • 2 bananas, peeled
  • 4 tsp. chia seeds
  • ¼ cup whey protein powder

Directions:  

  • Scoop yogurt into the blender first for easier pureeing
  • Add in remaining ingredients and blend until smooth
  • Scrape sides of the blender to make sure all powder is incorporated into the recipe
  • Pour into a glass and enjoy

Citrus Spinach Arugula Salad with Spice Candied Pecans

UnknownIngredients:

  • 1 quart spinach
  • 2 cups arugula
  • 4 tbsp. spice candied pecans
  • ¼ cup grapefruit segments
  • 1/3 cup beets cooked and peeled
  • ¼ cup orange juice
  • 1 tbsp. orange zest
  • 1 pinch of salt and pepper
  • 1/3 cup orange segments
  • ¼ cup grapefruit juice
  • 2 tbsp. lemon juice
  • 1 tbsp. lemon zest
  • ¼ cup goat cheese

Directions: 

  • Pack spinach in a measuring cup and place into a large mixing bowl along with the arugula
  • Zest orange and lemon into mixing bowl with greens
  • Peel oranges and grapefruit, then supreme both
  • Add to mixing bowl with greens
  • Squeeze cores of the orange and grapefruit into mixing bowl
  • Add fresh-squeezed lemon juice
  • Dice cooked beets and add to bowl, add salt and pepper
  • Mix salad and portion onto plates
  • Top with crumbled goat cheese and spice candied pecans

Green Machine Kale Smoothie

Ingredients:

  • 2 cups black kale, ribs removed, wash & dried
  • ½ each banana, peeled                                      
  • 2 tbsp. cold water                                        
  • 4 ¼ cup frozen peaches
  • 1 cup ice, crushed
  • 2 tsp. agave syrup or honey

Directions:

  • Combine all ingredients in blender and blend thoroughly

Raw Zuchini Alfredo

zucchini alfredoIngredients:

  • 1 cup cashews, unsalted raw chopped
  • ¼ cup pine nuts                                      
  • ½ tbsp. lemon juice
  • 1 ½ cloves garlic                                      
  • ¾ cup water
  • ½ tsp. thyme
  • ½ tsp. salt
  • 8 cups zucchini

Directions:                                 

  • Using the julienne blade on a mandolin, cut zucchini length wise to create noodles
  • Blend all ingredients except zucchini in a high power blender until smooth and starts to warm up from blender, about 5 minutes
  • Cut top and bottom off of zucchini
  • Pour sauce over individual portions
