A man known for his love of strong drinks—particularly his famous association with the Bloody Mary—Hemingway was initially skeptical of this light, fruit-based cocktail. But after a few contemplative sips, he reportedly declared it “good enough for Scott,” referring to his literary contemporary F. Scott Fitzgerald, before returning to his more familiar, tomato-based libation.

While the classic Bellini remains an icon, I fell in love with the Beach Thyme Bellini, a modern twist that introduces an earthy, herbal note. The addition of fresh thyme beautifully complements the natural sweetness of white peaches, adding a subtle depth that enhances the drink’s complexity.     1. In a heavy saucepan, heat the peaches, sugar, lemon juice, and thyme sprigs over medium heat until the mixture is thick and syrupy, approximately 8 – 10 minutes. Remove the peach mixture from heat and allow the mixture cool. Remove the thyme sprigs and discard. Purée the peach mixture in a blender until smooth.

  1. Spoon three tablespoons of the peach purée into a champagne flute. Pour in prosecco or sparking wine and stir until combined. Serve cold.
